This morning I decided to make Blueberry Omelettes. I know it sounds strange but it's good. I usually make them with blue or feta cheese as the tartness of the cheese balances the sweetness of the berries. A little green onion goes a long way with this delicate flavor combination. On the boat today, I had no choice but to use cheddar. Cheddar works, but it would not be one of my first choices. I put in too many green onions and that was a mistake.
